  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 3 bricks (227g each) cream cheese, softened
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons powdered sugar
  • 2 tablespoons all-purpose flour

Instructions

  1. Reduce apple cider with mulling spices in a pot until thickened (about 1 hour). Set aside to cool.
  2. Preheat oven to 350°F (175°C).
  3. Process cookies into crumbs and mix with melted butter, salt, and powdered sugar.
  4. Press crust mixture into a springform pan and bake for 10 minutes; let cool.
  5. Lower oven temperature to 325°F (160°C). Beat cream cheese and brown sugar until smooth.
  6. Add sour cream, vanilla extract, salt, cinnamon, and cooled apple cider; mix until creamy.
  7. Incorporate eggs one at a time along with flour; mix gently.
  8. Pour filling into crust and bake in a water bath for about 90 minutes until edges are set but center is slightly wobbly.
  9. Turn off oven; cool gradually inside before refrigerating for at least 8 hours.
